Chocolate Banana Bread Recipe

After Emma’s recent social media take over for Lark we had lots of requests for her recipes so here’s one that is perfect for lock down…

Chocolate Banana Bread
 
If you’ve been keeping an eye on other peoples’ lockdown bakes, you may have noticed that a common trend seems to be banana bread. It’s not difficult to see why; they’re a winner with everyone and you can often mix them up with ingredients that you’ll easily find in your cupboards. My own recipe is a slightly healthier twist on the traditional, combining bananas with chocolate, oat flour and ground almonds to create a rich, fudgy and satisfying treat.
 
3 (340g) ripe bananas
110g oat flour (just blitz oats in a food processor)
50g ground almonds
55g cocoa powder
75g light brown sugar
2 tsp baking powder
½ tsp salt
6 tbsp. light olive oil/vegetable oil
4 tbsp. milk
1 egg
 
Preheat your oven to 180C/160C with fan (gas mark 4). Line a loaf tin with baking parchment.
Whisk together all your dry ingredients in a bowl.
Using a fork, smash up your banana until it liquefies. Add the egg, oil and milk, then mix.
Pour your banana mixture into your dry ingredients, and mix until just combined. Pour this mixture into the loaf tin.
Feel free to sprinkle chocolate chips/chopped nuts on top. You could even slice another banana in half and float the pieces on your mixture.
Put in the oven for 50 mins – 1 hour.
